Yields: 1 bowl
Ingredients:
1/2 cup cooked quinoa
4 baby tomatoes chopped
1/2 bell pepper chopped
broccolini + avocado oil
1/2 avocado
1 egg
chopped green onion
*optional: feta
Directions: Prepare egg to your liking; basted, hard boiled or poached
Saute broccolini until slightly wilted and soft, chop into pieces
Assemble bowl: place quinoa at bottom of bowl, place egg, broccolini, tomato, and bell pepper on top of quinoa. Sprinkle green onion and feta on top
