My Trick for Not Wasting Fresh Herbs


How often do you buy big beautiful bunches of cilantro, basil, mint, parsley, green onion, or chives and find yourself using them only once, then tossing them with major feelings of guilt?


I just had to think of a way to turn these herbs into some goodness to avoid waste and justify buying these fresh herbs in the first place.


Then I thought about what pesto is-basically herbs and olive oil blended together. So from this thought, I have figured out a trick for not wasting a single herb in your fridge or garden!


This easy hack turns bland recipes into holistic works of art.


Okay here is the trick to not wasting a single herb:


All you do is is throw all of your herbs in a blender, with a few tablespoons of olive oil, some lemon (or lime), and BAM you have a home-made pesto herb sauce made from all the fresh herby goodness in your fridge you were seconds away from throwing out.


Just follow this recipe for my herby pesto sauce:


Throw all your herbs in a blender (you really can't go wrong with what you put in there-trust me)

Throw in a few tablespoons of olive oil

Throw in any nuts if you have (walnuts, pistachio nutmeats, almonds, pine nuts would all work great!)

Add in some lemon or lime

Bonus* You can even add parmesan cheese if you eat dairy

Some suggestions to spice it up:

1 tsp of salt

1 tsp red pepper flakes, or jalapeno if you like spicy like me


You can even freeze for weeks and use in last-minute pasta recipes, as a marinade, or a base to an aioli dipping sauce (hello mayo) then roast some sweet potatoes to dip-yum!


You can't go wrong with herbs, a blender, and an open mind.


Next time you see herbs about to go bad, get out your blender and experiment away!
