Ingredients:
1 cup almond flour
2 tbsp coconut flour
1/4 tsp baking soda
1/2 cup coconut flakes
1 lemon-zest and juiced
1/4 cup maple syrup
1 egg
1/4 tsp vanilla
Optional: drizzle dark chocolate over the top
Steps:
1. Preheat oven to 350 and line a baking sheet with parchment paper and lightly grease
2. Mix together dry ingredients in a medium size bowl
3. Whisk together egg, lemon and the rest of wet ingredients in a small bowl. Add the wet ingredients to the dry ingredients and mix well.
4. Separate the dough into 12 balls and squish with a fork making a criss cross
5. optional; drizzle dark chocolate by melting coconut oil and mixing with cacao powder
