Shaved Brussel Caesar (dairy free)

The best caesar salad you will ever eat! The brussels are shaved down and massaged so you really don't even feel like you're eating raw brussel sprouts. The dressing is my favorite part, it's savory, creamy and a bit garlic-y. Tastes just like a classic caesar except it's made with nutrient dense ingredients and no dairy. Im even going to make it as a dip for my next charcuterie board-it was so good!

Cook time: 15 minutes

Total time: 35 minutes


Serves 2-3


Ingredients:

Salad:

2 cups halved brussel sprouts

1/2 cup chopped cucumber

1 jalapeno * if you like spicy

1/2 lemon


Dressing:

1/4 cup oil

1 tbsp tahini

1 tbsp dijon

3 tbsp lemon juice

3 tbsp hemp seeds

3 garlic cloves

1 tsp fish sauce*

1 tsp salt

*1/4 cup water


Directions:

Salad: To shave the brussels; either use the shave feature on your food processor OR you can do by hand with a knife (slice very thin shreds) or use a mandolin. You should have about 4 cups of salad. Add brussels to a big mixing bowl and squeeze a little lemon, add a pinch of salt over the brussels and give them a little massage to soften the texture (about 2 minutes). Make sure to drain any excess water after massaging. Then add the chopped cucumber and jalapeno.


Dressing: Combine all ingredients except water in a blender (I used a nutribullet) and blend for about 10 seconds. The dressing should be quite thick so start by adding 1/4 cup water and blend-this should be enough water to create a perfect creamy consistency. Adjust flavors if needed. You should have a little over 1/2 cup of dressing.


Combine the dressing into the mixing bowl and mix well. Top with croutons if you desire; I crumbled Mary's Flax herb crackers on top. Since brussels are thick and sturdy, this salad will sit well for a day.


*fish sauce can be replaced by capers, anchovy paste, nori, something salty or fishy
