One night we got back from a day trip, had some leftover tortilla chips and we wanted just a simple dinner of nachos and tacos (which literally never happens with me, I get too excited and start opening cupboards, getting out appliances, throwing spices around) OBVI I had to make a vegan cheese sauce for the nachos.
This cheese sauce was simple, took ONE appliance only ;) and all dairy free so we didn't feel yucky after devouring the entire sheet of nachos. It's pretty much all ingredients you would have in your pantry; cashews, onion, spices, taco sauce, hot sauce, nutritional yeast and thats basically it! Comment to let me know how it turns out!!

Yields: 2 cups
Ingredients:
1 cup soaked cashews*
6 tbsp almond milk unsweetened
half white onion
3 tbsp nutritional yeast
1 tbs chili powder
1 tsp garlic powder
1 tsp cumin
pinch salt
1 tbs dijon mustard
juice of one lemon
a few douses hot sauce*
1 tbsp taco sauce*
*soak cashews overnight (at least 4-6 hours) OR boil hot water and pour over cashews, let sit for 1 hour
*I used Trader Joe's taco and hot sauce but any brand will work! Don't have either? Try some salsa and red pepper flakes!
